Medical Medium Recipe Challenge – October 21 – Fat Free Mac and Cheese

When I was growing up one of my favourite meals my mom would give to us would have to be KD – Yep – Kraft mac and cheese. I know my nieces today love that stuff so I suppose not much has changed in regards to kids and their taste buds!

When I came across Medical Mediums fat free Mac and Cheese recipe I was skeptical but thought I would give it a try for dinner for BOTH Brent and myself. Serving it to Brent is like the ultimate challenge. He loves his meat and dairy!

Ingredients: Carrots, potato, vegetable broth, herbs/spices, gluten free brown rice elbow pasta – I also added cooked mushroom and garlic which is not apart of his original recipe but added tons of flavour!

Carrots: Carrots refuel the liver with glucose, vitamins and minerals.

Potato: According to the medical medium ” The entire potato, inside and out, is valuable and beneficial for your health: potato plants draw some of the highest concentration of macro and trace minerals from the earth. Potatoes are also high in potassium and rich in vitamin B6, as well as a fantastic source of amino acids, especially lysine in its bioactive form. Lysine is a powerful weapon against cancers, liver disease, inflammation, and the viruses such as Epstein-Barr and shingles that are behind rheumatoid arthritis, joint pain, autoimmune disease, and more. Potatoes will be your allies if you’re looking to fight any chronic illness—to fend off liver disease, strengthen your kidneys, soothe your nerves and digestive tract, and reverse Crohn’s, colitis, IBS, or peptic ulcers.

10 out of 10 for taste and creaminess! This dish was so good that my husband had two servings. I will definitely be making again. You could also add a tbsp or two of nutritional yeast to this dish if you are not following the Medical Medium protocols and just looking for a yummy and hearty low fat dinner dish.

Medical Medium Recipe Challenge – October 20 – Pumpkin Pie Smoothie

Despite the unusually warm weather for this time of month (20 degrees today!) I was craving something “fall-ish” due to the beautiful scenery and colours I have been witnessing lately. Nothing better than the taste of pumpkin during the Autumn months.

Thankfully Medical Medium has a recipe for just about every taste and I was excited to find a Pumpkin pie smoothie recipe over on his blog!

Ingredients: Banana, pumpkin puree, pumpkin pie spice, cinnamon, almond milk, dates

Banana: One of the most nutritional and healing fruits readily available today. They are 76 percent water and full of vitamin C, B6, potassium, copper and manganese. They are a great electrolyte food and good for busy people on the run. They are anti viral and anti fungal . They are a great food choice for those suffering from chronic illness. They are a great food for lowering blood pressure. According to the medical medium ” Bananas should be ripe when eaten which means the peel should be lightly speckled and the fruit has a sweet, creamy taste. Unripe bananas can cause constipation and other adverse reactions”

Pumpkin: According to Medical Medium “Pumpkin is packed with antioxidants such as vitamins A, C, E, beta-carotene, and zea-xanthin which can help prevent age-related macular disease. Pumpkin is also a rich source of B-vitamins such as folates, niacin, thiamin, and pantothenic acid and minerals like calcium, potassium, and phosphorus. 

It is an excellent food for aiding weight loss and for reducing cholesterol. The high amount of phytonutrients in pumpkin have been shown to help prevent the risk of cancers, particularly mouth, lung, and colon cancer. Pumpkin also contains several anti-aging benefits and the antioxidants help to keep skin wrinkle-free and radiating a healthy glow. 

It also contains immune-boosting properties which can help the body stay strong and ward off common colds and flus that may be going around. It has the highest antioxidant strength of all the food sources and is several hundreds more potent than any fruit or vegetable. Cinnamon is a great source of vitamins A and B-complex and minerals such as chromium, iron, zinc, and calcium.  It is particularly good for helping diarrhea, nausea, vomiting, indigestion, flatulence, and arthritis. Cinnamon is known to help prevent and shorten the duration of the flu as well to eliminate congestion and mucus from the body. It is also very beneficial for lowering cholesterol and to help regulate blood sugar. Dates contain anti-inflammatory and anti-infective properties which make it an excellent food for those who suffer with chronic infections and auto-immune disorders. They also help to control heart rate and blood pressure which offers protection against strokes and coronary heart diseases. Dates contain an easily digestible fiber that has been found to help prevent colon, prostate, lung, endometrial, breast, and pancreatic cancers. They are also known to help lower LDL (bad) cholesterol, relieve constipation, improve anemia, and prevent macular degeneration.

Medical Medium Recipe Challenge – October 19 – Chili Loaded Baked Potatoes

Today my husband and I spent most of our day doing yard work. This involved raking a massive yard, picking up 1000s and 1000s (literally) of black walnuts, filling the back of the truck with said leaves and walnuts, rinse and repeat. We both were so tired and needed a hearty but healthy dinner after all of that!

The chili is loaded with so many different kinds of veggies – it’s delicious and nourishing.

I added a little bit of dill to his cashew sour cream recipe which is why it looks a little different 🙂 This made enough to have left overs for two more days most likely!

Anthony Williams (Medical Medium) feels strongly about the healing powers of the potato! Here’s what he has to say:

Yes…safe to say on my healing journey I have definitely embraced the potato once again and I’m not sorry for it!

This recipe is definitely a 10 out of 10 and something I will be adding into the weekly rotation as my husband enjoyed it as well.

Medical Medium Recipe Challenge – October 18- Creamy Chaga Ice Cream

Posting this a bit late! Better late than never. Since yesterday was Friday, i was in a pretty good mood! We all deserve a yummy breakfast especially on Fridays. Thankful that this one was a winner! I adapted Medical Mediums recipe for “Creamy chaga ice cream” and just changed it up a little. You can find this one over on his recipe blog.

Instead of regular almond or coconut milk I used Silk Dark chocolate almond milk and I topped with raw hazelnuts and shredded coconut instead of his suggestions since I didn’t have those on hand!

Medical Medium Recipe Challenge – October 17- Smashed Potatoes

The potato has a terrible reputation these days thanks to trendy low carb/no carb diets making them out to be the villain. But guess what? It’s not the potato that is the issue. The potato is a highly nourishing and beneficial food for our body – not to mention comforting! It’s all the goop that we put on top that makes it detrimental to our health (loading potatoes with salt, butter, cheese, bacon and things of that nature) catch my drift?

And so, for Day 17 of my October Medical Medium Recipe Challenge I dove in head first to his crispy smashed potatoes. You can find this recipe over on his blog.

I am definitely not complaining! Solid 10 out of 10 here because what’s not to love about potatoes and yummy herbs – even a drizzle of olive oil on top!

Ingredients: Potatoes, fresh minced garlic, dried herbs such as parsley and dill, extra virgin olive oil

I served this with left over roast cauliflower, garlic tahini sauce and hot sauce. Yum!

Garlic: Has been used medicinally since ancient times. Garlic is antiviral, antibacterial, anti fungal, anti parasitic and rich in the phytochemical allicin, a sulfur compound that prevents disease.
